WHAT MAKES OUR BEET KVASS UNIQUE?
We source our beets and ginger from a variety of local organic farms. We then hand craft small batches and ferment in glass vessels for 28 days. Making them robust in flavors and rich in wild probiotic diversity. They are bathed in food-grade nitrogen, to help further oxygenate the blood and cleanse the liver, resulting in a smooth yet complex finish like no other kvass out there.
If you are new to fermented foods and drinks we suggest starting out with 1 ounce and working your way up to 2-4oz daily. Best way to take beet kvass is on an empty stomach, either 2 hours after a meal or first thing in the morning. Morning and night times have their own benefits; morning offers you the digestive enzymes to eat food throughout the day and gives you foot soldiers to combat colds and flus; at night, studies have shown that beet kvass can aid in a good night’s sleep. The night time is also a time when the body is resting and healing itself, it is also a time when you are not inundated with toxins from the environment, foods, and stress, making the work for these probiotics a little easier.
Ingredients: We source all of our ingredients from Ojai organic farmers and within Santa Barbara and Ventura Counties organic farming community. We take great pride and loyalty in sourcing from different farms in each batch of sauerkraut we make. This allows us to craft new, wild and diverse sets of probiotics each time, we like to call them Wild Probiotics. Our external world and the microbiome world inside us THRIVES on biodiversity. We can bet you-you can not find this on any store shelf out there.

Safety and Side Effect: Fermented foods are considered safe for most people. However, some individuals may experience side effects. Due to the high probiotic content of our traditional fermented foods, the most common side effects is an initial and temporary increase in gas and bloating, usually due to having a comprised microbiome/gut or having too much. If you are new to fermented foods than we suggest starting out with either 1-2oz of fluid or 1-2 tablespoons of food to minimize any side and grow and healthy and happy gut slowing.
Suggested Serving: 1-2 tablespoons is all you need to receive the benefits.
Considered one of the World’s Healthiest Food. I felt inspired by the amazing health benefits kimchi has to offer! (1) I researched so many traditional Korean fermented recipes and felt like the veggie ingredients were almost identical to what we can grow right here in Ventura and Santa Barbara Counties Organic Farmlands. The only ingredient we could not find growing locally was what gave the kimchi all it’s spicy flavor-Gochugaru-made traditionally by drying Korean red chili peppers in the sun, de-seeding them and crushing them into the flakes. We found an organic Korean farm that was still growing with traditional farming practices and off we went into Kimchi land!

We ferment our hot sauce anywhere from 4 weeks to 52 weeks making it extremely complex in flavor and heat. We have won two years in a row 2nd place in the international hot sauce competition “Scovie” awards for best all natural hot sauce for 2018 and 2019. Anyone who tastes our unique hot sauce can attest that it is out of this world! Our hot sauce changes in color and flavor due to two things; 1) the timing in which we select the peppers, early in the season peppers are normally green then orange to finally red, so our hot sauce changes with the seasons. 2) the longer we allow the peppers, onions and garlic to ferment the more robust and complex the flavors get.
What is Bio-Soda?
An organic ginger and turmeric probiotic root culture. We infuse seasonal fruits and herbs with additional benefits in mind, similar to kombucha.
How is Bio-Soda Different Than Kombucha?
It is made with roots instead of a mother/scoby.
It is more of a bacteria ferment than a yeast ferment.

Our award winning salsa came in too in 2nd place at this year’s 2019 International Scovie Award as best all natural salsa. This salsa is not hot but is deep in robust flavors. When you ferment salsa you get to taste all the California summer ingredients and they come together for a party in your mouth. You won’t believe what it can do to your morning ritual egg dish. This is a seasonal ferment only, meaning as long as the farmers are growing tomatoes out in the field we can make and provide salsa. On average our salsa is available at our local farmers markets from as early as July and as late as January.
Our Probiotic Dressing can have up to 17 ingredients with both probiotics and prebiotics for your microbiome. Everybody knows we should eat more salads, but if you make probiotic salads you quadruple the benefits. The most powerful food combo you can have is prebiotics (food for bacteria) and probiotics (fermented foods) together in a meal. These salads will do just that. When you eat a probiotic salad, you’re getting billions of enzymes and probiotics. California pickling cucumber harvest season is only 2 months long so we have a very limited stock of these precious cukes available. We ferment them for 4 weeks in glass and then let nature make the magical probiotics and childhood memories of sour garlic dill flavors take you away. Enjoy them while they last.

PRODUCTS WE DO NOT SHIP
Due to the nature of some of our wild probiotics like Bio-Soda and Salsa, unless they are kept refrigerated at ALL times they will explode in transit. Our shippable products like beet kvass, sauerkrauts and hot sauce seem to stay stable enough, although in extreme heat conditions, leaks and breakage can occur. We hope our customers appreciate the live nature of the wild probiotics and know that they are getting the highest quality one can receive to their doorstep without going to the farmers market.
